Grilled potatoes with rosemary and smoked paprika

This low-fat side dish is a great complement for virtually any grilled entree. Feel free to add a chopped onion to the packet, if that's your thing. (It's not the hubby's thing.)
 
Grilled potatoes with rosemary and smoked paprika
Servings: 6
  • 1 pound potatoes, cut in 1-inch pieces
  • 6 cloves garlic, minced
  • 1 tablespoon plus 1 teaspoon olive oil
  • 1 1/2 teaspoons dried crushed rosemary
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  1. Preheat grill to medium heat.
  2. In a bowl, combine potatoes, garlic and olive oil, and toss to coat. Add rosemary, paprika, salt and pepper, and toss to coat again.
  3. Using two large pieces of foil (about 24 inches each), arrange them like a plus sign.
  4. Place the potatoes in the middle of the plus sign and spread them out into an even layer. Wrap the remainder of the foil pieces over the potatoes, pinching the foil to seal the packet. Wrap a third piece of foil around the packet.
  5. Grill potato packet for about 20 minutes on each side, until potatoes are tender.
