Satin truffle pie

The kiddo and I were home last weekend while the hubby was at work, and we both were in the mood for a luscious, homemade dessert.

But it was hot. Really hot.

Relatively speaking, of course. In reality, it was about 88. And we were inside our house, which has central air and a thermostat that’s usually set at about 68 degrees.

But in the late afternoon on bright sunny days, our west-facing kitchen can get a little warm.

I’m not a warm weather person, and by “warm weather,” I mean temps over 62. Maybe 55 if it’s sunny. So 88 is a scorcher.

And on that particular day, while the kiddo and I stared dolefully at the oven, debating whether to ratchet up the temp in our house to bake some cookies, the hubby was outside at Fargo Shanley, taking photos of the Shrine Bowl, played outdoors in the midday sun.

“Let’s make this one,” my kiddo finally said, pointing to one of the recipe options I’d laid out on the table.

The fudgy truffle pie certainly looked tasty, and lo and behold, it was a no-bake recipe. Double win. So the kiddo got to work on the crust while I started the filling, which did require us to heat up the stovetop.

And because misery loves company, I was touching base with the hubby, especially after he posted an update to the Banner’s Facebook page stating that the day’s game-time temps were “hovering around 250 degrees.”

I told the hubby I knew exactly how he felt; I’d been stirring pie filling over a medium-low stove for 10 minutes and the temp in the house had skyrocketed to 73 degrees.

I think he appreciated knowing he wasn’t alone.

And a few hours later, after both the pie and I had sufficiently chilled, the kiddo and I sampled a bite. I wasn’t sure what to expect, but the filling blew my mind. It wasn’t like pudding, but also wasn’t quite like fudge or mousse. It wasn’t creamy, chewy or cakey.

The only way we could describe the texture was satiny, hence the name.

And it was cold. Wonderfully, blessedly cold.
