The hubby and I watched a lot of basketball last weekend. (A LOT.)

Both of us noticed that for the first time in as long as we could recall, the North Dakota Class B boys basketball tourney didn’t overlap with the first round of the NCAA men’s basketball tourney.

I’m a creature of habit, and this totally threw me off. So I overcompensated with games on my DVR and the approximately 37 ESPN channels we get.

We started off with the Class B boys basketball tournament, alternated that with various college basketball conference tournaments and then – probably to console and prepare ourselves to watch Thompson most likely win the title this year – we watched the Hillsboro-Central Valley boys basketball championship games from 2017 and 2018.

I also caught a 90-minute special on the Duke Blue Devils’ back-to-back championships in 1991 and 1992 – both of which I remember quite fondly – but the hubby excused himself from the room because he has not-quite-as-fond memories of Duke’s first titles.

Suffice it to say, I didn’t leave myself much time for cooking this weekend – which is a shame, because we rely on leftovers a lot during busy weeks.

And this week, the hubby and I were running in different directions to about 10 meetings – not to mention the roughly 52 NCAA men’s basketball games we started keeping tabs on after the tourney kicked off Tuesday with its play-in games.

But I had supper covered.

This foolproof dish is so simple and versatile that I can toss it together in about 10 minutes on a weeknight, or even double the ingredients and toss it in the slow cooker for four hours if I want to go that route.

This filling is great on sandwiches, but can pull extra duty as a pasta sauce, served on Texas toast like a French bread pizza or – my personal favorite – spooned atop a baked potato.

And you can customize it to add whichever pizza fillings you like. We stuck with the basic recipe, although if I’d been making this for just myself, I would have added some green peppers, chopped mushrooms and black olives.

But whether you’re cooking for your family or feeding a crowd of frenzied fans, you’ll have plenty of time to sit back and watch the game – and your meal will be a slam dunk.
